Seven Step Dinner in thirty minutes!

A quick, easy, and healthy meal to serve your family on a busy weeknight. This one is a favorite in the Wood family home.
Ingredients
  • 4 chicken breast
  • ½ flour
  • 2 eggs, beaten with ¼ cup of milk, or water
  • 1 cup seasoned Italian bread crumbs
  • ¼ cup olive oil
  • 2 cups tomato sauce, homemade or prepared
  • 4 ounces mozzarella cheese, shredded
  • ¼ cup parmesan cheese
  • 1 small package of angel hair noodles
  • 1 loaf French bread

Instructions
  1. Add flour to a bowl, eggs in another bowl, and bread crumbs in a third bowl
  2. Preheat pan to medium with oil
  3. Boil four large chicken breasts until thoroughly cooked.
  4. Drain the water and clean the chicken.
  5. Cut chicken breast in half.
  6. Dip chicken in flour, then eggs, back in flour and then into the bread crumbs.
  7. Place chicken in frying pan browning each side and place into your casserole pan.
  8. Generously pour pasta sauce over the chicken and top with mozzarella cheese. Bake at 350 for twenty minutes or until cheese is melted.
  9. After removing chicken from the oven place chicken on a plate along with your noodles and bread and top it all off with a little bit of crushed parsley!

 

HOMEADE SAUCE:
1 can tomato sauce
1 TBLS parmesan cheese
1 tsp salt
1 tsp pepper
½ clove garlic, minced
1 TBLS parsley

Fluffy whole wheat pizza? I think yes!

Ingredients:

CRUST:
1 teaspoon organic sugar
1 1/2 cups warm water (110 degrees F/45 degrees C)
1 tablespoon active dry yeast
1 tablespoon olive oil
1 tablespoon freshly shopped Rosemary
2 tablespoons parmesan cheese
1 teaspoon salt
3 1/2 cups whole wheat flour

Directions:

Pre heat oven to 425

1) In a large bowl: warm water, sugar and yeast (stir sugar until it’s dissolved then add yeast. Make sure to give your yeast a little stir as well so it’s all covered with warm water). Cover and let sit for
TEN MINUTES.

2) If your yeast has doubled in size you can now add: Salt, olive oil, parmesan cheese, rosemary. Lightly stir until well mixed.

3) Start adding ONE cup of flour at a time until the dough starts to form. After dough has formed slid out onto a flour dusted surface.

4) Do not over knead but make sure all the outside flour has been worked into your dough and you have a nice round ball. IMPORTANT, make sure when forming your pizza ball you keep all cracks on the bottom. If they’re on the top you pizza dough will not rise very well.

5) In another large bowl take 1 teaspoon of olive oil and lightly grease the sides. Give the pizza ball a little rub down as well to prevent sticking while rising. Let sit in a warm area for 45-1hr or until doubled in size. .

6) Has it doubled in size?! Yippie, that means you’re 20min away from amazing pizza! Now we need to get it shaped and dressed- Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top pizza with your favorite toppings, such as sauce, cheese, meats, or vegetables.
Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

Something with chocolate?

>As requested I have made something with chocolate. Can you guess what it is?
Here’s a few hints- everyone is a fan, young and old alike, they go great with a glass of milk and no matter where you are in the world you can find one.
That’s right, I made Chocolate Chip Cookies!
Although these look like regular chocolate chip cookies, their not. These cookies are HEALTHY, go figure! A very dear friend gave me this recipe when we use to live in California. I admit I was a little afraid to taste a healthy chocolate chip cookie. I thought myself , “whole wheat and chocolate chips mixed together? It can’t possibly taste good!” Boy was a I wrong! These are amazing. So amazing that I’m going to share the recipe with YOU!
Cream butter, sugar, eggs & vanilla together

In a small bowl add: Flour, rolled oats, baking soda, baking powder, & salt. Stir together until well blended.

Place on a cookie tray and bake for 15-25min at 350

2c sugar
2c brown sugar
4eggs

4c flour
5c blended oats
2tsp baking soda

24oz bag chocolate chips

Beef Stew

Hi Ladies!
This week my mom and I made Beef Stew. It was SO yummy! As requested I have pictures to share, I hope they help!

step1
Step One:
Cut 5lbs of beef into Lg 1/4inch chunks and place on cookie tray. Generously season with:
Celtic Sea Salt
Organic Pepper
and Garlic Powder
Bake at 350 for 15min

Step Two:
Now place into stew pot with 2TBL organic beef broth, 1 bulb of garlic & cook over medium heat for 20min then add 4cups water and turn on low.

Step Three:
Chop the following:
6 Lg potatoes
1 stock celery
1 white onion
Put 1/4cup coconut oil in Lg skillet. Add all chopped veggies & cook till tender. Then add to stalk pot along with 4cubs beef broth. Cook on high till boiling then turn down to low & cook till thick. Aprox 4hrs.

After 4hrs your stew should look like this. . .

Bekah’s Bistro- My Homemade Spaghetti Sauce

 

The Jamaican who thinks she’s Italian

My sister often teases me that I am the only Jamaican who thinks their Italian, and I suppose she’s right. I am so intrigued by the old world and ways of the Italian cooks that I just had to create my own ‘Secret Roll Recipe’ to pass down to my children some day. It took me eight long weeks to create a recipe worthy of passing down to the next generation, but I am proud to say that I have done just that. As much as I would love to share this with you I have to hold true to the Italian ways and keep it among family. ;-)

However, I will share with you my homemade Spaghetti Sauce!

Bekah’s Three Rules to know before you begin ~

One: Keep in mind that NO MATTER WHAT you can never put TOO MUCH Rosemary! If you think it lacks something- Add Rosemary. If you can’t smell it from the other room-Add Rosemary. Rosemary is the answer to a great sauce.

Two: Remember when cooking spaghetti it’s all about smell. Taste will follow!

Three: Salt, Pepper, Rosemary, and Oregano are your best friends.

Now let’s get cooking!

Lets first start with our meat-
You will need 4 pounds of hamburger
Place your hamburger in a bowl and add the following ingredients:
4Eggs
1tbls Fresh Cracked pepper
1tsp salt
1tbls garlic powder (make sure there is NO salt in your garlic pepper. Otherwise you’re really adding 2tsp of salt to your meat.)

Now take your hamburger and work all of the spices together by hand.
When finished mixing the meat, take your tablespoon cookie scoop and begin making the meat balls.
If you have a large electric skillet I would highly suggest using that to cook your meat balls. You can place more on the tray and they cook evenly. Make sure you have theses going before you start on your sauce so they will be nice and hot for serving!

Okay now let’s begin making our sauce!
Turn your pan onto low. You want your sauce to simmer, not to boil .
Place four jars of spaghetti sauce (use whatever you keep on hand. My mother has canned ours over the years but we use the store bought brands too.) into your pan and add the following ingredients:

1tbls Rosemary (make sure your Rosemary is in first so it can soften as you cook your meatballs)
½ -1tsp Celtic Sea Salt (this gives a STRONG salty taste, so only use a little!)
1tbls freshly cracked pepper
1- ½ tsp Oregano
1 4.0 oz can of mushrooms, finally chopped
½ white onion finally chopped
½ tsp cinnamon

If you can’t smell that Rosemary add just a pinch more. Rosemary gives a lot of flavor to the dish. Mid way through before you plate, taste and see if you like the flavors. I’ve tried to lessen the amount I put in so you can make it to fit the taste of your own family. Increase as you see fit!
